The only thing I cook besides eggs and bacon for breakfast is a salad. I am a cooking-challenged female, and I am not ashamed to admit that it is not a skill I was blessed to possess. I can do math, earn As in my college courses, and blog. But I was not gifted to stand at the stove and cook. Thank the Lord for a husband who loves to cook and is who I call the “Soup Whisperer.”
I am grateful that I don’t have to worry about meal preparation. I can spend my time more effectively on the activities I can do with ease. My children cook the holiday meals, as my two daughters are caterers. I take some responsibility for their learning to cook so well. One tells me that she learned to cook from scratch so she never has to eat frozen food again. As a working and single mother, frozen foods kept my kids from starving.
So, if I have to choose my favorite food to cook, it would be a tomato and spinach salad, with carrots, celery, blueberries, and a good zesty Italian dressing. I add chicken or sardines from the can, and voila, dinner is served! No worries about burning down the house or putting too much salt. The only thing that can top that meal is a trip to Chic Fil-A!
